Healthy eating doesn’t have to mean complicated prep or food waste. Microgreens are the MVP of flexible, fridge-friendly meals—and they make meal planning surprisingly easy.
Whether you’re cooking for one or feeding a family, here’s how to build a waste-free meal plan using microgreens you’ve already got growing.
1. Think in Bases (not baseball though!)
Start with your base (I’m talking about your foundation here, not about baseball!), then mix and match toppings throughout the week:
- Grain bowls (quinoa, rice, couscous)
- Toasts and wraps
- Pasta or noodles
- Eggs (scrambles, frittatas, burritos)
Microgreens go with everything. Keep a tray growing on your counter for grab-and-snip freshness. Seriously, it can be that easy! Toast, butter (I actually really love almond butter), and some microgreens on top. Yum and oh-so-simple.

2. Use What You’ve Got
Got leftover roasted veggies, half an avocado, or the last few slices of chicken? Wrap it up, toss it in a bowl, or layer it on toast—top with microgreens and you’re good to go. My favourite is grabbing pretty much everything that’s left over in a pan to reheat, crack a couple eggs on top and let those simmer and cook. Divide among plates and top with a sprinkle of fresh microgreens!
Waste-free doesn’t mean boring. It means smart, flavorful, and flexible.
3. Plan for Leftovers
Make double portions of dinner and turn them into tomorrow’s lunch:
- Monday’s taco meat becomes Tuesday’s wrap (yes, I know it’s supposed to be Taco Tuesday but we always have it on a Monday. I blame kids and their activities!)
- Thursday’s rice turns into Friday’s veggie bowl
- Last night’s chicken? Microgreen sandwich, anyone?
Add greens = meal upgrade. Every. Time.

4. Embrace the Snack Board
Cut-up veggies, hummus, cheese, crackers, and microgreens on top? That’s dinner. Call it a snack board, grazing plate, or kid-friendly “make your own bites.” (Because who can actually pronounce charcuterie?)
Microgreens add freshness, crunch, and nutrients with zero waste.
5. Store Greens Right
Make your microgreens last by storing them in breathable containers with a paper towel to absorb moisture. Or better yet—keep them in their growing tray and snip as needed.
Less spoiled produce = more happy meals (and a happier fridge).
