Growing fresh, nutritious greens in just 7 days? Yes, you can even if your last houseplant cried for help. Seriously, if I can grow these, you can too. I’m known for killing a cactus…they can survive the desert, but can’t survive me! Microgreens are perfect for busy families who want a quick win!

Day 1: Plant Your Seeds

  • Gather your shallow tray, potting soil, seeds, and spray bottle.
  • Fill the tray with soil and level it.
  • Sprinkle seeds evenly on top no need to bury them, but if you feel more comfortable you can sprinkle a light coating of soil on top.
  • Mist lightly with water and cover with a humidity lid or plastic wrap.

Days 2-3: Mist & Wait

  • Keep seeds moist by misting 1–2 times daily.
  • Don’t soak them—think morning dew, not a rainstorm.
  • You’ll see the first signs of sprouting!

Days 4-5: Give Them Some Light

  • Once you see little green shoots, remove the cover.
  • Place your tray in a bright window or under a grow light.
  • Keep misting as needed and watch your greens grow!

Days 6-7: Prep to Harvest

  • Your microgreens should be about 2 inches tall.
  • Leaves should be open and vibrant—hello, harvest time!

How to Harvest

  • Use clean scissors to snip the greens just above the soil.
  • Rinse gently and pat dry.
  • Store in an airtight container in the fridge (if they even last that long, my kids tend to start munching away as soon as I wash them. Okay, sometimes even before I wash them but I try not to get too upset about that, we’ve all eaten a bit of dirt!!).

Quick Ways to Enjoy Them

  • Toss on salads, layer in sandwiches, blend in smoothies, or sprinkle over tacos.
  • Bonus: Sneak them into kid meals for an undercover veggie boost!
